This cider is made by a surprising combination of grape skins and cider, where the grape skins are soaked in fermenting cider for three weeks. The skins are sieved and the cider is given time to refermentate and then mature for six months before being blended with naturally sweet new season cider.

Description

Martin Berkeley, maker of Pilton cider, is a master of 'keeving'; an artisanal method that allows the maker to retain some of the natural sweetness in a cider. This old technique still requires a lot of knowledge and skill today. In its simplest definition, "keeving" is a traditional fermentation method used to produce sparkling, semi-dry, and sweet ciders without the addition of additional sugars. For its ciders, Berkeley uses the bittersweet cider apples that grow in traditional orchards around Pilton's parish.
