Description
Pilton Pomme Pomme cider is a product of Martin Berkeley, the maker of Pilton cider. Berkeley is a master of 'keeving'; an artisanal method that allows the maker to retain some of the natural sweetness in a cider. This old technique still requires a lot of knowledge and skill today. In its simplest definition, "keeving" is a traditional fermentation method used to produce sparkling, semi-dry, and sweet ciders without the addition of additional sugars. For its ciders, Berkeley uses the bittersweet cider apples that grow in traditional orchards around Pilton's parish.
