The Txalaparta is a dry apple wine with subtle roasted notes and light pear aromas. A fresh cider with fine bubbles made from two local apple varieties. The 'apez sagarra' provides the lively aromas and the 'eztika' gives this cider its roundness and fruitiness.
Recommended as a dry white wine, slightly sparkling. Perfect with fish, shellfish, Bayonne or Basque ham, white meat and some cheeses (goat cheese, soft cheese).

Bixintxo Aphaule started his career as a winemaker, but his love for cider soon grew. Wanting to stay closer to home and the Basque traditions, he decided in 2001 with his wife Pascale to produce cider. The ciders are made from local apple varieties from our own orchard and from orchards of surrounding farms.
Working with respect for people, land and culture: that is the motto of the Basque farmers. That is why Pascale and Bixintxo of Domaine Bordatto cultivate their 3.5 hectares of apple trees and their hectares of vines in an organic way, preserving the history of the landscape.
