Basandere, or “la dame sauvage” in Basque mythology, has a fruity freshness, a light taste with aromas of ripe apples. The sugars are nicely balanced and the delicious amount of bubbles emphasizes the softness of this cider.

Suitable as an aperitif, but can also be enjoyed with cheese or as a dessert.

Composed of 12 local apple varieties selected for ripeness (including Mamula, Eztika, Eri sagarra) and fermented exclusively with indigenous yeasts. After fermentation, the cider is aged in the bottle for another two months for a natural mousse.

Description

Bixintxo Aphaule started his career as a winemaker, but his love for cider soon grew. Wanting to stay closer to home and the Basque traditions, he decided in 2001 with his wife Pascale to produce cider. The ciders are made from local apple varieties from our own orchard and from orchards of surrounding farms.

Working with respect for people, land and culture: that is the motto of the Basque farmers. That is why Pascale and Bixintxo of Domaine Bordatto cultivate their 3.5 hectares of apple trees and their hectares of vines in an organic way, preserving the history of the landscape.
