Basa Juan, or “The Wild Man or the Devil” in Basque mythology, contains aromatic notes of dried fruit and has subtle scents of apples and pears. This cider is a Pétillant Natural with a naturally sparkling bubble.

A slightly bitter aftertaste means that this cider goes well with charcuterie (chorizo, young ham) or as an aperitif.

The cider is made from 15 local apple varieties and selected for their ripeness. Bordatto uses only indigenous yeasts for fermentation and the cider is aged in the bottle for another two months after fermentation for a natural mousse.

Description

Bixintxo Aphaule started his career as a winemaker, but his love for cider soon grew. Wanting to stay closer to home and the Basque traditions, he decided in 2001 with his wife Pascale to produce cider. The ciders are made from local apple varieties from our own orchard and from orchards of surrounding farms.

Working with respect for people, land and culture: that is the motto of the Basque farmers. That is why Pascale and Bixintxo of Domaine Bordatto cultivate their 3.5 hectares of apple trees and their hectares of vines in an organic way, preserving the history of the landscape.
